Have The People In Israel Collectively Gone Mad?

I love listening to people ask "Why can't we have peace?". They had peace. On October 6th, Israel and Gaza had gone months without any significant attacks, people moved relatively freely into the West Bank, and the region was safe for Palestinians throughout the region. I wonder what changed?
That is in error on virtually everything you wrote.

Care to clarify and cite examples?
Palestinians have never been "free to move about the region." Essentially Gazans have been imprisoned while the IDF periodically barged into Gaza and kicked in doors looking for "suspects." Often when the "suspect" was not there the IDF would just take whoever was, haul them to prisons to be kept as long as the IDF wanted to keep them. No charges, no day in court. In the West Bank there are roads the Palestinains are not permitted to drive, and road blocks on those roads they are permitted to use. Settlers come into an area of the West Bank and kick out the people living there. It may have seemed perfectly peaceful to the Israelis, but the Palestinians live a different story.
