The gender bender crowd needs to wear name tags with their preferred pronouns if they expect people to get it right. If you look like a dude, you're a he/sir. If you look like a woman, you're a she/ma'am. If I can't readily tell, I'm going with my gut. Sorry if anyone gets offended. Wear a name tag. Simple solution.
