Grand Canyon Road Trip from DFW

We're driving from Dallas to GC and staying on the southern rim. Will see the Hoover Dam and cruise through Vegas to drop wife off at airport for a girls trip and then I'm heading back with The kids. Keep in mind I'll be with 3 boys ages 3-12. I think we were going to drive through Amarillo on the way out and Lubbock on the way back to switch it up.

Any recs on anything is greatly appreciated. Where to stay, what to see, where to eat, I'll take it all. We've just started planning the trip.

In the Hoover Dam the hard hat tour is great although your youngest might rule that out. Trying to think of kids places in Vegas. The Mandalay Bay Shark Reef Aquarium would be pretty cool.

I was disappointed in Carlsbad Caverns.
 
You sir, have a high bar. Been there twice, stunning. My kids have talked about it for years.
Reminded me of fantastic caverns in Springfield Missouri. We were there last Memorial Day & walked out instead of taking the elevator, that was a pretty good workout.
 
My kids were so interested in the Grand Canyon they spent the whole time chasing a squirrel around trying to get a pic. I'm like, you can see those at home. There are not any mile wide holes in Oklahoma to visit.

I knew of a few in Drummond Hall.
